Ice cream is gonna save the day
Happy hump day everyone!
I can’t believe that not only are we halfway through the week, we are also halfway through February- the last month of summer in Australia! For some of us this is the time we rush off to the beach for a few last trips before it gets too cold to even stand by the water.
Then there are those lucky enough to live in areas that isn’t really that affected by winter so it isn’t such a big deal. Nevertheless I thought I would share with you a healthy ice-cream re-creation to cool off on the hot days.
When I was young my sister and I loved Weis ice-cream bars, particularly mango and macadamia. For this reason I wanted to try and make a healthy version that still tastes super delicious.
These Mango and Coconut ice-cream bars are completely vegan and refined sugar free. Using coconut milk and fresh fruit means that they are good for you and aren’t going to leave you with a sugar crash or have the kids running around on a sugar high.
