Going Bananas? Green bananas!

I am going to let you in on a secret. Ok here goes… I am not very good at sticking to recipes! I know, SHOCK AND HORROR! I tend to find recipes and change them depending on what I like or more commonly, what I have on hand.

Today I felt like making something sweet and knew I had to use up some pumpkin I had roasted earlier in the week. I googled a few recipes but nothing stood out so I thought I would make my banana bread but add pumpkin. Then as I was getting flour out of my cupboard I noticed my Green Banana Resistant Starch I had received in my Goodness Me Box a few months back. I thought “hmm that could be delicious”. Yes I can’t even stick to my own recipes!

I had made a recipe using Green banana Starch before but wasn’t a fan so I thought before I completely dismissed it as a cooking ingredient I would give it a second chance. 

Green Banana Starch is said to be high in prebiotic fibre, helping to nourish beneficial gut bacteria, rich in inulin to regulate digestion and improve your metabolism,  while also high in potassium, zinc, magnesium, phosphorous and manganese. 

I am happy to say this time it passed the test! The bread came out the perfect texture, and I can’t wait to toast some up tomorrow and top with butter or better yet nut butter.

I cut mine up and individually wrapped. They can frozen and defrosted for an easy snack. Due to the moisture content it is best kept in the fridge.
