Healthy Hot Cross Buns with sweet cinnamon butter
Well it is almost that time of year again.. Easter! Who doesn’t love an excuse to eat chocolate for breakfast?
Majority of the time however, each year when Easter rolls around unfortunately I am away from family so I don't tend to celebrate in a big way. My partner and I have developed our own little tradition of indulging in croissants, fruit and chocolate fondue... because it’s DELICIOUS! Understandably however not everyone wants to include sugary treats into their day. For this reason I developed a healthier version of hot cross buns.
This morning despite it being pitch black outside my body and brain was like “Hey IT’S SUNDAY, What are you doing now? Oh you’re trying to sleep? That’s no fun! You should get up, Enjoy the day!…” and it goes on. Generally once I am awake, there is no going back to sleep. No, no, I. AM. UP! So I decided to use this morning in a productive way and did some cleaning and made a batch of these little hot cross buns.
I have used a few different flours which means they are quite dense but I think wholemeal flour would work just as well, however you may need to adjust the liquid as brown rice flour is drier and often used as a thickener.
I quite like that these buns are more dense than your regular hot cross bun though. They almost have the texture of a hot cross bun crossed with a scone. They taste delicious served with sweet cinnamon butter which is included in the recipe here.
