Minty Pine Green Smoothie

Friday, We made it! 

I have been spending the day around the house cleaning and cooking delicious treats as I have one of my best friends visiting tomorrow. I thought we could take advantage of this beautiful weather and head outdoors for some swimming, relaxing and a picnic. You'll come to find picnics are one of my favourite things to do. What more can you want? Food, friends and being outdoors. Day. Set. 

Anyway today I had a lot of leftover things in the fridge so for lunch I made myself a sushi roll (which I won't post up here because despite it being DELICIOUS it didn't look very pretty) and a Minty Pine Green Smoothie. It was perfect for a warm day. I have included the recipe below. Enjoy. 

Ingredients:

1/4-1/2 cup coconut milk

1 cup of fresh pineapple 

1/4- 1/2 frozen banana

2 cups of baby spinach

8 fresh mint leaves

1 tablespoon of chia seeds

1 teaspoon of flax seeds

1 teaspoon vanilla extract

Method:

Place all ingredients in a blender and blend until smooth.

* To make this more of a meal you can add a scoop of protein powder and top with muesli.
