Breakfast Burger

Ingredients:

2 buns/bread rolls of choice (I used a rye bun)

2 eggs

100 ham or bacon

1 slice swiss cheese (sliced in half)

1/4 red onion (sliced)

2 handfuls of greens (I used baby spinach and rocket)

4 button mushrooms

Sprinkle of store bought dukkah or make your own

Sauce of choice ( I used Beerenberg Chilli sauce)

Salt and Pepper to season

Butter or olive oil to fry

Method:

Place butter in non-stick frypan and and wait until the butter heats up and starts bubbling. Add onion and mushrooms. Fry until browned. * I like to add a few drops of water in the pan as this helps the mushrooms to cook up nicely. 

Once the onions and mushrooms are browned, add the greens and dukkah and stir until wilted. Take off heat and set aside in a plate or bowl.

Using the same pan that you cooked your greens in, place ham or bacon in the pan and cook over a high heat until desired. The ham will only need a minute or two as it will just need to heat up, whereas the bacon may need a few extra minutes to cook through. Once this is cooked take ham/bacon out and set aside with greens.

Place butter in separate fry pan until it starts bubbling and crack eggs into pan. Fry eggs for 1-2 minutes and then flip egg and turn pan off.

Meanwhile, slice buns in half and place middle side down into pan that bacon/ham on was fried in. Keep over heat until buns are slightly toasted and warmed. Take buns off heat and top each bun with half of the greens mixture, ham, one egg, swiss cheese, sauce, salt and pepper.

Breakfast is served :D
