Serves 4

bruschetta

Ingredients

2 tomato

1 red onion

1/2 bunch basil

2 tablespoons balsamic vineagar

2 tablespoons olive oil

salt and pepper

Method

Finely dice tomato and red onion and mix together in a bowl. Tear the basil into small pieces and add to the bowl. 

In a jug mix vinegar and oil them add to the tomato mixture. Season with salt and pepper. 

Serve on top of freshly toasted garlic bread or with crackers.
