coconut oil for cooking (1 teaspoon)
1/2 cup Buckwheat Flour
3/4 cup milk of choice (e.g dairy, almond, coconut)
1/2 tablespoon granulated stevia (or sweetener of choice)
1/4 teaspoon baking powder
1/4 teaspoon vanilla extract
Place milk and egg in a measuring jug (or jug that allows easy pouring) and whisk until combined.
Add flour, baking powder, stevia and vanilla to jug and whisk until mixed.
Add coconut oil to a frying pan and heat to a low/medium heat.
Pour mixture into frying pan in small batches and cook until bubbles appear (about 2-3 minutes) then flip and cook for another 1-2 minutes.
Serve topped with fresh fruit and a healthier sweetener such as rice malt syrup.
