Chai Spiced Porridge with poached pears

Chai poached pears

2-4 tablespoons of chai tea

1 cinnamon stick

3 teaspoons stevia

1-2 teaspoons rice malt syrup

2 pears (peeled)

orange rind* optional (see note)


Spiced Porridge

1/2—1 cup grated zucchini

1/2 cup quick oats

2 teaspoons of stevia

2 tablespoons of apple puree

1/2 cup coconut milk 

1/2 cup of reserved liquid from the poached pears


To poach pears place chai tea in a saucepan with 1 litre of water and boil until well steeped (2-3 minutes). Add orange rinds, cinnamon stick, stevia and rice malt syrup.

Place peeled pears in water and simmer for 10-20 minutes until soft.

Bring all porridge ingredients to a boil, stirring regularly, then simmer.

Cook for 3-4 minutes, continuing to stir regularly. Once thickened divide into 2 bowls and serve with half a poached pear each.

note: I used orange rind I had previously dried in the oven when making a mix for mulled wine. This isn't needed but adds a nice flavour.
