Raw Fruit Pizza

Serves 8


1 cup oats

1 tablespoon flax seeds

1/2cup shredded coconut 

1/2 cup dates

1/2 teaspoon vanilla essence

1/4 cup hazelnuts

1 teaspoon cacao powder

1/4 c shredded coconut

Fresh fruit to serve- 1 C raspberries, 1 C sliced strawberries


Place dates in a cup with 1/4 cup of boiling water and soak for at least 30 minutes.

Meanwhile, blend oats, flax seeds and coconut in a food processor or blender until the consistency is fine like a flour. Empty the “oat flour” into a mixing bowl with the cacao powder.

Add the dates (and the liquid they were soaking in) and hazelnuts to the food processor and blend until smooth.

Add the date mixture and vanilla essence to the oat flour and mix together. If this is too dry, add a touch of water until the mixture is sticky in consistency. *It is important not to add too much water as it will make the mixture too sticky and will not roll properly.

Line a pizza tray with baking paper and then place the mixture on top of the paper. Place another piece of baking paper on top of the mixture. 

Use a rolling pin on the top price of paper to roll mixture out evenly on the pizza tray. *The paper helps to roll the mixture out evenly as it can be quite sticky. 

Once the mixture is rolled out, place in fridge or freezer for at least 30 minutes to firm up.

Once the base is ready, remove baking paper and top pizza with any seasonal fruit. I love fresh raspberries and blueberries with this as the base is quite sweet and it balances it out.
