Mango Smoothie Bowl


Serves 1


1/2 cup coconut milk

1 fresh mango or 1 cup of frozen mango

1/4 cup yoghurt of choice (greek, coyo)

1 teaspoon vanilla extract

* If you prefer a sweeter smoothie you can add 1 tsp agave, 1/2 frozen banana or sweetener of choice. 


Place all ingredients in a blender and blend until smooth. Place smoothie in a bowl in the freezer.

Now the fun part. Chop up any fruit and or nuts you have on hand. You can put anything you like on top of your smoothie bowl. I like fresh fruit, coconut, and chopped up protein bars. Add anything that takes your fancy really! 

* To make this more of a meal you can add a scoop of protein powder and top with muesli.
