Chocolate Protein Brownies

Ingredients

420g can Butter Beans, drained and rinsed

1 shot fresh coffee (or 30ml of any coffee, I used a Nespresso decaf intenso capsule)

1 small zucchini, grated

1 cup Wholey Foods Cocoa Breakfast Smoothie

2 tablespoons of stevia 

1/8 teaspoon salt

1/2 teaspoon baking powder

1/2 cup milk

Method

Preheat oven to 180 degrees C and line small loaf tin (approx. 10x20) with baking paper.

In a food processor, blend butter beans, coffee and zucchini until smooth. Add in Wholey Foods Smoothie, stevia, baking powder and milk then mix until smooth. 

Place in baking tin and bake for 25-40 minutes. Temperatures and times may vary dependant on oven, so keep checking after 20 minutes. They should be ready when brown on top and/or when pierced with a toothpick and it comes out clean.

Pull out of the oven, leave in tin let cool.

These can be sliced and eaten as is or topped and iced as in the picture. I used 2 tablespoons of greek yoghurt and 1 tablespoon of Happy Way Coffee Protein Powder, but you could easily use the 1 tablespoon of the Wholey Foods smoothie instead. Just mix together, ice and put in fridge to set. I sliced these into 16 pieces which may look small but believe me they are dense so you won't need them big!
