Protein Packed Banana Bread

Ingredients

3 ripe bananas
2 eggs
1 teaspoon cinnamon
1 cup teff grain
½ cup happy way vanilla ice ice baby protein powder
2 teaspoons baking powder (aluminium & gluten free)
2 tablespoons Pic's smooth peanut butter
a sprinkle of salt
1 tbs Maca powder (optional)

Method

Heat the oven to 170C. Line a loaf tin with baking paper or use a silicon loaf pan. 

Meanwhile blend Teff grain in a blender until a fine powder is produced. Mix this in a large bowl with vanilla protein powder, cinnamon, salt and baking powder.

In blender or food processor blend bananas until smooth. Add eggs and peanut butter and process until all mixed together.

Add the banana mixture to the flour mixture and mix until the flour and banana mixture is completely mixed together. 

Bake for 35-50 minutes or until a skewer comes out clean.

Take out of oven and allow to cool slightly before slicing. This will allow it to stay together and not crumble.

Eat warm or at room temperature.
