1/4 cup raw almonds
1/2 cup oats
1 teaspoon raw cacao powder
1 tablespoon Maca powder
1/4 C cup dried dates
1 cup of cherries, fresh or frozen
3/4 cups of shredded coconut
2 tablespoons of almond milk or coconut milk
1 tablespoon raw cacao powder
1 tablespoon tahini
1 teaspoon of stevia
1 tbs boiling water
Place dates in a mug and fill mug with boiling water until dates are submerged in water.
Place all base ingredients, plus 2 tablespoons of water that dates were soaked in, into food processor and blend. Blend until ingredients form a sticky texture adding extra water if needed.
Flatten out the base into a tin lined with cling wrap. The texture can be quite sticky so I find it best to place extra cling wrap over the base and spread it out by pressing the base into the tin.
Blend the cherries, coconut and almond milk until all combined and place on top of base layer in tin.
Freeze for around 15 minutes or until set
Add all the topping ingredients into a mug and stir. Add on top of cherry mixture and sprinkle with extra coconut and cacao nibs.
Freeze for 10 minutes.
