2 salmon fillets (fresh or frozen or hot smoked)
1 portion of soba noodles
1 bunch of asparagus
2 handfuls of baby spinach
8 cherry tomatoes
Fresh herbs to serve: coriander and parsley work well
1 tablespoon soy sauce
2 tablespoon red wine vinegar
1 teaspoon sesame oil
Preheat oven to 180 degrees Celsius. Line a baking tin with baking paper and when the oven has reached temperature place salmon on tray and in the oven.
- If using fresh salmon it should only take approximately 8 minutes. If using frozen salmon this will take 20 minutes. If using hot smoked, you can eat as is.
Cut shallots, slice cucumber in small rounds, cherry tomatoes in halves and chop woody ends of asparagus.
Cook soba noodles as per directions on packet. Just before soba noodles are cooked place asparagus in the same pot and let sit for 3 minutes. Drain.
Place all dressing ingredients in a jar, put on lid and shake for 5 seconds.
Once salmon is cooked, divide all ingredients amongst 2 bowls and top with fresh herbs and dressing.
