Smashed Avocado



1 small avocado

1 small cube feta cheese (about a tablespoon equivalent)

1 tablespoon fresh coriander (chopped finely)

1/2 lime (juiced)

Sprinkle of herbamare or salt

Sprinkle cracked pepper

Sprinkle of dried chilli flakes *optional

Extra optional toppings

Chilli olive oil (I used Talinga Grove Chilli Infused Olive Oil)

Salad Booster (I used Chia Co chia & sesame )


Scoop avocado flesh into a bowl and roughly mash with a fork.

Crumble fetta cheese into avocado mixture then add all other ingredients.

Serve on toast alone or add extra toppings such as chilli olive oil and salad booster.

Tip: To make this into a more satisfying meal top with a poached egg or smoked salmon to boost your protein and good fats (omega 3/ omega 6) intake.
